Domaine de la Grand Chaume is the creation of the youthful Romain Bouchard. Having trained under his father, Romain begain his own 3.4 hectare estate in 2005, then began organic conversion in 2007. The Premier Cru ‘Vau de Vey’ vineyards were planted in 1979 and he is but one of a handful to possess vines within this minuscule site. All grapes are harvested by hand, then fermented in 70% stainless steel and 30% French oak. They are bottled after 12 months.
The wines are classic Chablis of the highest order. Elegant in all respects, they are more stony than flinty. The understated use of oak and precise balance between acidity and fulsome fruit suggest to one critic, moi, the lifting meadow mist at the breaking of a spring dawn.
